Merritt Bates-Thomas is back for another edition of What's Cookin'? and she is bringing a delicious Farmer's Market Recipe.

Summer Vegetable Stew

1 Tbsp olive oil

1/2 cup sweet onion, chopped

1/2 cup green bell pepper, chopped

2 cloves garlic, minced or 2 tsp garlic powder

1 cup peeled and diced tomato or 15 oz can diced tomato

1 cup sweet corn kernels, cut off the cob

1 cup sliced okra

1/2 tsp smoked paprika

Salt and pepper to taste

Add olive oil to a large skillet.   Saute onion, bell pepper, and garlic over medium-high heat for 5 minutes or until tender.  Add tomato, corn, okra, and smoked paprika; cook, stirring often, for 10 minutes.  Season with salt and pepper to taste.
