I normally don't put more than one recipe blog up per week, but I had to make an exception. Last night I whipped up a recipe I found on Pinterest and O.M.G it was so good. 

It's called Chicken in Sun Dried Tomato Sauce...and it's as great as it sounds. What's even better is that I had almost all the ingredients I needed right in my pantry. It was super quick and easy to make, which is always a plus. And, of course, it's gluten free! I'll attach the ingredients below.

Meat
- 4 chicken thighs (I used 6 and still had plenty of sauce left over, so do whichever you prefer)

Produce
- 3 tsp minced garlic
- 1/2 cup sun dried tomatoes (be sure to drain the excess oil from the tomatoes)

Canned Goods
- 1 cup chicken broth

Baking and Spices
- 2 tsp Italian seasoning
- 1 tsp salt and pepper

Dairy
- 2 tbsp butter
- 1/2 cup half and half
- 2/3 cup parmesan cheese

Directions
Put the butter in the frying pan and cook chicken thighs 5-7 minutes on each side, or until golden brown on each side. Once those are done, keep them somewhere warm while you make the sauce.
For the sauce, pour everything else into a pan and bring it to a boil for another 5-7 minutes or until it starts to thicken. You don't want to burn the sauce, so try to keep it at a mild boil. Once the sauce is done, place the chicken back into the pan and spoon the sauce over the thighs.

Then, you're all done! How easy is that? The taste is excellent and it's so quick and easy to make. Oh, and it's kind of healthy, minus the butter and cheese...but let's live a little.

*NOTE: my batch (pictured above) came out a tad oily. I didn't take enough time to drain the sun dried tomatoes good enough, so make sure you do that! I also may have used a tad too much butter because I love myself.
