One of my husband's favorite foods is pancakes. Which is fine for him, with his speedy metabolism and all, but not so great for me. I know what you're thinking: just don't eat the pancakes. But if I'm going to be the one cooking them, you better believe I'm going to eat them. So I found a healthier version. This way, he still gets his pancakes, and I don't have to feel guilty after eating an extra tall stack!

Here is what you'll need:

  • One large banana
  • 2 large eggs
  • A pinch of baking powder (optional)
  • A few dashes of cinnamon (optional)

Peel your banana and mash it with a fork as much as possible. Then add your two eggs and mix. If you can't get all of the lumps out just from mashing and mixing, I recommend throwing the mixture in your blender or food processor, just so you can get it as smooth as possible. That is really all you need for this recipe, BUT just to make it a little more interesting, I like to add the baking powder and cinnamon at this time.

After your ingredients are blended, cook on a skillet just like you would normal pancakes. The texture should be similar to French Toast. Once finished, I like to add blueberries or strawberries to my stack of pancakes, and then top with sugar free syrup!
