Maddie’s Go-To Quick and Dirty White Chicken Chili Recipe
So, if there's one thing I'm decent at, it's whippin' up a good crock pot recipe. Now that I'm working two jobs, and come next week - grad school, I'm always looking for a way to crunch down on my meal prep time.
Typically, when you think of quick and easy, you think fast-food. That used to be my go-to when I was running short on time. However, around this time last year, I joined a gym and made the decision to start eating healthier. This has been quite a challenge while on a short schedule. I've made crock pot meals before, but they had become a distant memory. I'm not sure why, but something possessed me to bust out the 'ol crock pot a few months back and I've been using it weekly every since.
Of course, I have a favorite meal that I whip up on a pretty regular basis. It's creamy, it's delicious, and it's not awful for you. I found the recipe on Pinterest a while ago and it has become a favorite at my house. Behold - white chicken chili. I've always enjoyed a good bowl of chili, but this never ceases to amaze me. My boyfriend practically begs me to make it and I always have plenty leftover to take to work for a couple days. Bonus: it's gluten free!

- 2 Chicken breasts
- 1 can Black beans, drained (I only use a half can of beans because my boyfriend isn't big on beans)
- 1 can Corn, undrained
- 1 tsp Onion powder
- 1 can Rotel tomatoes, undrained
- 1 tbsp Chili powder
- 1 package Ranch dressing mix
- 1 tsp Cumin
- 1 8-oz package Light cream cheese (I chop the cream cheese up into smaller squares to distribute them in the pot easily)
Directions
Let it cook in the crock pot on high for 5-6 hours and enjoy. I hope you guys love it as much as I do! I hope to make this a regular thing and feature more of my go-to recipes for you guys.
