Pizza night is always a popular night at my house. But instead of ordering out, using canned pizza dough, or trying to make your own and trying to get everyone to agree on toppings, grab a bag of pita bread for a personal pizza night.

Using pita bread drastically cuts your prep time since what will ultimately become the pizza crust is already cooked. Plus, if you're trying to keep things on the healthier side, pick up whole wheat, or whole grain pita. The kids also love it, because it gives them complete creative control over. Not only can they choose what goes on their own little pizza, but they can actually create it with their own hands.

Next time your at the grocery store, pick up the following things:

  • 1 bag of your choice of pita bread
  • 1 jar pizza sauce
  • Shredded mozzarella or pizza cheese blend
  • Your choice of meat and vegetable toppings

Once home, preheat the oven to 425 while browning and draining any meat that requires it (ground beef, sausage, anything bought raw). Chop any vegetables into small, bite size pieces. Since the pita bread is already cooked, the amount of time your pizza spends in the oven will be just long enough to melt the cheese and cook the toppings. If the vegetable chunks are too big, you run the risk of burning the bread before the vegetables are cooked through.

After you've compiled your masterpiece, placed on a greased baking sheet and bake for five to seven minutes, or until cheese is melted and the vegetables are tender.
