According to thedelite.com, the one Must Eat Food from Missouri is none other than the iconic Dry Rub Applewood Smoked Baby Back Ribs. The website went and ranked the must eat food from every state and you get some classics in Illinois they say you must eat the Italian Beef (surprised they chose it over deep dish pizza but a great choice nonetheless), and in Iowa, they say you must have the Pork Tenderloin Sandwich (which is let us be honest one of the greatest sandwiches known to man). On the site, they say this about the ribs in Missouri...

"This is the specialty of Missouri: dry-rubbed baby backs bathed in apple and cherrywood smoke for 14 hours, then given a light glaze in tribute to the saucier versions you’ll see at neighboring joints. These are the ribs you must try if you’re ever in Missouri."

I will say that Missouri is famous for its ribs and Missouri is a giant BBQ state but there is an argument to be made that Toasted Ravioli should be the must eat food in Missouri, when I moved to the Quincy/Hannibal area a couple of years ago from Chicago, I had already tried St. Louis style ribs and had eaten a pork tenderloin sandwich but I had never heard of or tried Toasted Ravioli and now that I have I will say it is one of my top 3 favorite appetizers of all time now.
