I was scrolling social media this morning when I saw a post from my friend Nancy McCloskey. I love a good breakfast, but I'd never tried eggs cooked this way. My Mom made many breakfast combinations growing up, but never this. I was intrigued to find out more.

WHAT ARE EGGS IN A BASKET?

We've all heard the saying, "Don't Put All your Eggs in One Basket." This has nothing to do with that! There are many names for the breakfast dish, including toad-in-a-hole, frog-in-the-pond, one-eyed jack, one-eyed-pete, or gashouse eggs. There are more than 50 different aliases you may have heard. So, what are eggs in a basket? It's not that complicated! Take a slice of bread, cut a hole in the middle, add an egg in the hole, and fry it with butter or oil. That's it! Of course, you can make different variations of the dish.

"It was at a restaurant in Bardstown Kentucky. When I was growing up, we called them Gold Mines.", Nancy shared

It looks delicious, and I want to give it a try.

HOLLYWOOD HISTORY

According to Wiki, the dish is also known as "Guy Kibbee eggs", due to its preparation by actor Guy Kibbee in the 1935 Warner Bros film Mary Jane's Pa. In the film, Kibbee's character refers to the dish as a “one-eyed Egyptian sandwich”. It is also called "Betty Grable eggs", from the actress’ preparation of "gashouse eggs" in the 1941 film Moon Over Miami.

The breakfast dish has made many movie and television appearances throughout the years. I feel silly not knowing what this was!
