Recently, I saw a video that completely changed my summer grill outlook. I love grilling - it's probably my favorite form of cooking. But chicken is always a challenge for me. And my biggest nemesis - chicken breast. It's always dry, not quite done, or just flavorless.

But, after I watched this video and tried it for myself, there's NO going back. To make the breast really delicious, I mixed 1/4 cup extra virgin olive oil with 1/4 cup water and my spice choice. If you don't want to make your own spices, Grill Mates line of marinades are all delicious. Make sure you put the water in as your chicken will soak it up and make the meat really juicy.

After cutting and marinated for at least an hour, I preheat my grill to 400 degrees and clean off the racks. Then I cook for about 7-8 minutes on each side until the internal temp is 165 degrees.

Now this particular video shows you how to butterfly. I've been cutting them in half but you don't have to. If you butterfly your breast, you can fold it over with slices of cheese, and veggies like mushrooms, onions and peppers inside. So. Good!
