I like cooking, until it gets complicated. I don't want to cook anything that requires fancy kitchen tools that I've never even heard of. Plus, I don't want meal prep to take up my entire day. Who has time for that anyways? So I found a recipe that tastes amazing, but takes minimal effort.

All you need is:

  • 4 raw chicken breasts (they can be frozen or thawed)
  • One can of corn, drained
  • Two cans of black beans, drained and rinsed
  • One jar of your favorite salsa
  • One block of cream cheese
  • Instant brown rice
  • A medium - large crockpot

Place your crockpot on low. Put all chicken breasts in, fallowed by both cans of beans, salsa, and corn. Let everything cook on low for about 4 - 5 hours, or until chicken is cooked. Then use a fork to shred the chicken and stir up the mixture. Next comes the cream cheese. Throw it in and let it set for about 20-30 minutes with the crockpot still on low. Then mix everything together and serve over brown rice.

It's as easy as that! It takes a while, but there is minimal work to make this meal! Plus, everyone seems to love it!
