When the going gets tough, the tough go for grilled cheese.

Life can be a real pain in the ass sometimes. With the stress of work, making sure you have enough money to cover the bills, and those days when the kids are just absolutely impossible to deal with all coupled together, you need to seek refuge in something, anything less complicated. And that's where the classic grilled cheese sandwich comes in.

Don't get me wrong, I enjoy breaking out a cookbook and whipping together a full-blown meal as much as the next person, but there's something about the grilled cheese sandwich that is, well, comforting (that's why they call it "comfort food", right?).

And it's so darn simple with just three ingredients – THREE! If you have bread, butter, and cheese, you have a meal (although I'll jazz mine up by sprinkling some seasoning salt or garlic salt on the bread before throwing it in the skillet, because if you're going to eat a sandwich made exclusively from dairy products, why not go all out and make it even more unhealthy).

The draw of the grilled cheese isn't only how simple it is to throw together, but the nostalgia of it all. It takes you back to your days as a kid where all you had to deal with getting up, going to school, then coming home to play. You didn't worry about having enough money to pay the bills. You didn't care how the food got on the table, you just knew it was there when you wanted it. Life was easier then, and grilled cheese was a part of it.

It's funny how desperately you wanted to be an adult at that time because of the freedom you thought it brought with it. And don't get me wrong, being an adult is pretty cool. I'll eat a bowl of ice cream at 11:00 at night because I can, but for those days when the responsibility of being an adult weighs heavy, it's nice to lean on the simplicity of the grilled cheese sandwich to remind me that not everything in life is complicated.
