Taco night, Mexican night, or whatever you want to call it is a popular night at our house. But despite it's popularity, it can get a little mundane after a while. This super easy (and delicious) Doritos Taco Salad recipe is a great way to give it the kick in the pantalones it needs. Olé!

Side note: The photo above is not the finished product. I was so ready to eat it, I forgot to stop and take a picture. So there's that.

Ingredients

  • 1 pound ground beef
  • 1 packet of taco seasoning
  • Shredded Mexican or Nacho Style cheese
  • 1 can black or red beans
  • Fresh spinach
  • 1 bag of Doritos corn chips
  • 1 bottle of Western Salad Dressing

The above ingredients is how we make it at our house, however any of those can be substituted for healthier options. For example chicken breast or ground turkey could replace the ground beef, and there is a low fat version of the Western Salad Dressing available at most grocery stores.

You could also tweak this to your liking with extra ingredients such as chopped green pepper and onion, or black olives.

Directions

Brown and drain the ground beef, then add the taco seasoning according to package directions. In a large a bowl, mix the beef with the spinach, beans, and any additional ingredients you want. Serve in individual bowls or plates, and top with shredded cheese, crumbled Doritos, and salad dressing.

We have learned that by letting everyone add the Doritos and dressing on their own, it prevents the chips from getting soggy over time in the larger bowl. Plus, our kids don't care much for the Western dressing so this allows them to use Ranch instead.
