Melissa Awesome’s Healthy Faux-rito Bowl [RECIPE]
I'm calling this my "faux-rito" bowl because it isn't a real burrito bowl, but it's healthy and was inspired by Chipotle!
I've been working really hard to eat healthy, and stick to a healthy lifestyle, and I recently made something that was DELICIOUS! Also I'm no photographer so I apologize for this amazing photo haha I know really appetizing... This is also the day after I took it for lunch
Here's what you need:
- Bell peppers (I used a red, a green, and an orange one)
- Red onion (I think I used half of one)
- Brown Rice
- Salsa
- Ground Turkey
- Taco seasoning (I like to use the low sodium kind cause you'll use quite a bit in this recipe)
- guacamole
Here's how I made it:
- Brown your ground turkey and add taco seasoning to make turkey taco meat
- cut up your vegetables into strips and put them in a skillet I just use a little coconut oil and saute' them. Once they get soft I sprinkle some taco seasoning on them to flavor them (SO GOOOOD!)
- I use the Uncle Ben's 90-second brown rice but you can use whatever you'd like and I warm up the rice then put it in a bowl with a sprinkle of taco seasoning, and add in salsa it tastes like Spanish rice!
- Then combine all the ingredients in a bowl and add a spoonful of guac for additional flavor and BAM delicious faux-rito bowl
