It is no secret that I don't cook. I'm just not that good at it, but there is one dish that I can whip up in a hurry, feeds an army and tastes delicious!

So Ryan posted his fancy schmancy Mediterranean Baked Lemon Chicken recipe, and I thought well that's all good and great and everything, but I don't really like to handle raw chicken, and it looks like a lot of work! So if you want something that is quick, easy & doesn't require handling raw chicken (YUCK!) then let me introduce you to my favorite comfort food...

Chicken Noodle Casserole Supplies:

  • 1 box of Pasta (I usually use macaroni noodles but rigatoni or penne would work well too)
  • 1 can of Chicken (yes, canned... like tuna but chicken)
  • 2 cans of Cream of Chicken soup
  • 6-8 Kraft Singles
  • Plain Potato Chips

 

Preheat oven:350

In a large pan, boil your pasta & drain. Mix in the canned chicken & both cans of cream of chicken soup. Spread all of this into a 9x13 cake pan or casserole dish. Layer Kraft singles across the top of the pasta/chicken and then crush a couple of handfuls of potato chips over the top. Pop it all in the oven for about 10 minutes, until the cheese slices are melty and you're ready to go! It goes great with a little garlic bread if you're so inclined, or you can serve & eat it as it is.
