Last night, I tried my hand at making homemade gnocchi. If you aren't familiar with gnocchi, it's an Italian potato dumpling. There are lots of variations to making gnocchi but this recipe was easy and I had everything in my pantry. They were simple enough to make and really delicious!

Ingredients

  • 6 russet or Yukon gold potatoes
  • 1 tablespoon of olive oil
  • salt
  • 1 cup flour
  • 1 egg

Directions

  1. Peel and cut potatoes into cubes. Boil in salt water for 15-18 minutes until soft.
  2. Mash potatoes coarsely, add olive oil and salt.
  3. Let potatoes cool.
  4. Mix in beaten egg. Slowly add flour, stirring.
  5. Boil a second pot of water.
  6. Roll dough into long cylinders on a cutting board dusted with flour. Cut into bite-size pieces. *To add flair, press fork prongs softly into side of dumpling to create ridges.
  7. Gently place in boiling water. Wait until they rise to top of pot (3-5 minutes). Using a slotted spoon to take them out of the water, test to make sure they are done by giggling the gnocchi. If it wiggles, it's not done - place back in the pot for an additional minute. You want them to be done but not get hard. Add them to whatever recipe you choose and heat for an additional minute - two.

To make a meal, steam a head of broccoli, sautee 10 chicken tenders (cut up) and top with a white cream sauce!

To make the cream sauce, melt 2 tbsp butter in a large sauce pan. Add two tbsp flour and mix until a golden sauce forms. Add in 1/2 cup milk. Stir. Add 1/2 cup cream and stir until thick. Add final cup milk and stir until thickened. Add 1/2 cup parmasan cheese, 1 tsp salt, 1/2 tsp black pepper.
