Clean Eats: Turkey Taco Salad [RECIPE]
I’m not exactly the worlds greatest cook. In fact, I am not a fan of cooking at all. It’s a lot of prep for like 5 minutes of enjoyment, then you still have to clean up the mess you made. And who actually likes to do dishes? Unfortunately it’s become a bit of a necessary evil considering I’m trying to get that swimsuit body (in this voice). And last night I made the BEST taco salad I've ever made in my life, and good news! It's healthy! Also I’ve never made anything look so pretty in my life, so I felt the need to share it!
Looks delicious, right?! I know! When I cook things NEVER EVER come out looking pretty.
Here's what ya need to make it (no instructions really, because you just throw it all in a bowl...)
- Mixed Greens (I used romaine and spinach)
- Ground Turkey (cooked up and seasoned with low sodium taco seasoning)
- red and yellow bell peppers sautéed in coconut oil, and a few sprinkles of low sodium taco seasoning
- red onion (I am an onion fanatic, SO GOOD)
- diced tomatoes
- Spanish rice (recipe below)
- a teeny pinch of low fat cheddar jack cheese
I also made up some SUPER easy Spanish rice that won't break the calorie bank either!
- cooked brown rice (I am lazy, I LOVE to get the 90-second Uncle Bens whole grain brown rice in the orange package)
- empty the cooked rice into a bowl, and sprinkle some low sodium taco seasoning on it to flavor
- mix in some of your favorite salsa as well
And BAM delicious and east Spanish rice to add to your taco salad!
