Caribbean Shrimp Lollipops

Full of flavor and a little bit spicy, these Caribbean shrimp are perfect as an appetizer or a salad topping.

Ingredients

Shrimp Ingredients:
    • 1 pound shrimp, cleaned, rinsed, and deveined
    • 2 limes, quartered
Marinade Ingredients:
  • 2 tablespoons canola oil
  • 2 tablespoons orange juice
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, finely chopped
  • 1 teaspoon ground cumin
  • ¾ teaspoon garlic, minced
  • ¾ teaspoon ginger, minced
  • ½ teaspoon red pepper flakes
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground allspice

Instructions

  1. Preheat grill to medium-high heat.
  2. In a medium sized bowl, mix marinade ingredients.
  3. Toss shrimp in marinade and refrigerate until grill reaches 350°F-425°F.
  4. Thread 2 shrimps each on soaked bamboo skewers.
  5. Grill shrimp for 2-3 minutes per side until opaque.
  6. Serve on a bed of greens with lime slices or enjoy alone as an appetizer.
