A quick and easy dinner is only a few ingredients and 30 minutes away!

We've all been there. You get home from a day at the office, you look around the cabinets and the fridge for something to make for dinner, and nothing jumps out. But look closer, chances are you have exactly what you need to whip up a simple and delicious meal.

I threw this together one night when I was on my own for dinner, but it could easily be increased to feed the whole family.

Ingredients

  • 1 Boneless, Skinless Chicken Breast, sliced
  • 1 cup White Rice
  • Tempura batter (I used this recipe from Genius Kitchen)
  • Teriyaki Sauce
  • Oil for frying (I used Canola)

Directions

Cook rice in a rice cooker, or on the stove top according to package directions.

While the rice is cooking, make the tempura batter and set aside.

Slice the chicken across the grain into slices of medium thickness.

Pour enough oil in a skillet to cover the bottom, plus a little more. Heat oil in a skillet over medium-high heat until is starts to shimmer.

Toss the chicken slices into the batter and coat thoroughly.

Depending on how much chicken your making and the size of your skillet, you may need to fry the chicken in batches.

Once cooked through, transfer the chicken to a cooling rack, or a plate with a paper towel to help soak up the excess oil.

Serve chicken over a bowl of cooked rice and drizzle with Teriyaki*

*Sweet and Sour Sauce, or your favorite Asian condiment works too!
